What's your favorite egg salad recipe? It's James' birthday and I want to make him one of his favorites.

Any that doesn't include egg shell!

*g*

Whenever I eat my mom's egg salad sammiches - I always seem to crunch on some eggshell.

I can't believe its one of his favorites...mine is simple. Boiled eggs, mashed, with miracle whip, pickle relish and Jane's Crazy Salt.

Eggs and salad. My two least favorite foods in the world. It goes without saying that I have no recipe. :- )

My only recipe is diced hard-boiled eggs, mash up the yolks a little, then add mayo and mix. I guess sometimes I'll throw in a little dill, if I'm feeling wild. Oddly, I almost made some today, but by the time the eggs were done, I didn't have the appetite for them.

Deviled eggs, on the other hand, I find are a zillion times better if you add a little cider vinegar to the yolk/mayo mix.

For shell-free, I've found that setting a timer to boil them (20 minutes) makes for easy shell removal, as does starting with cold water, ending with cold water (get them good and cold as fast as possible afterwards -- ice cubes help too), and not letting them languish in the fridge for too long after Easter. :) I also like to rinse them off to make sure there's no membrane hanging around -- blech.

Happy Birthday James!

old eggs relinquish their shell easier than fresh eggs.

I am also in the super simple camp: hardboil eggs, de-shell, chop up, mix with mayo and salt and pepper to taste. put on potato bread with shredded lettuce, yum, sammitch!

Oooh, I love egg salad, too. LOVE IT.

I make a really simple egg salad all the time when I'm craving it:

2 boiled eggs

Some mayo (I don't know how much, just eyeball it so that when you mix it with the chopped boiled eggs it makes a nice smooth texture)

One chopped dill pickle spear (I like Klausen or however the hell it's spelled).

One chopped small onion.

About 1-2 TBS pickle juice (I learned this trick from my mom and it works great in egg salad, chicken salad and tuna salad)

About, uh...1/2 cup shredded cheddar cheese.

1-maybe 2? tsp chopped garlic

Mix it all up and YUM.

Sorry, I suck at recipes. I used to get SO MAD at my mother when I asked her for a recipe and she'd say, "I don't know, just eyeball it!" Come to find out she used to get mad at her mother for telling her the same thing. Now I understand why they say it. Just play with it until you get something that tastes good. Go easy with the mayo and pickle juice until you get it right. It's easy to add too much.

Oh, and Happy Birthday to your hubby!

Hi there!

This isn't really an egg salad recipe, but my wifey makes an awesome "Tuna, Mac & Egg salad". I think it's just Tuna & Macaroni with hard boiled egg mixed in. It's really awesome. [nods]

1. Go to grocery store.
2. Buy tub of egg salad.
3. Eat from tub with plastic utensil.

Look ma, no dishes!

Amy doesn't like egg salad, so I have to fend for myself. haha

Dice up some hard boiled eggs ( I don't mash the yokes, just chop them all up together)
A little bit of mayo
A little bit of mustard
A little bit of pickle relish (sweet or dill, your choice)
Salt and pepper to taste

I have had it with a little chopped green olive in it and with a little crumbled bacon and it's yummy either way.

Happy Birthday, James! :)
