Oh, I dunno if I could narrow it down to one favorite. I love the conversation Cass has with himself in the truck over whether to go rescue Jesse, and all of Tulip and Amy's scenes together... no wait!! The one-shot "Blood and Whiskey," where Cass meets a Lestat-wannabe vampire:

Cassidy: "Ye're a bit of a wanker, aren't ye?"
Eccarius: "Whankyr...is that one of the Eastern European terms for our race?"
Cassidy: "No. Wanker. Noun." (makes gestures) "As in, one who wanks."

Yeah. That's my favorite.
