More evidence of my debauchery...

I popped a bottle of wine open before 9 this morning!!

...Okay, okay. It was just for cooking. But I couldn't resist!

The wine went in a vague approximation of French Country Stew that's currently sitting in my crockpot. If it's any good I'll post the recipe. I love my crockpot. It makes my life so much easier. It not only does the cooking for me, but when I start a recipe, usually all I have to do is throw the things in the crockpot. I can even do it in the morning when I'm half-awake and listening to the SportsCenter that I already watched the night before. Plus, it's big (about five quarts, I think), so I have leftovers. My crockpot is my biggest ally in my attempt to eat out less and save money. Plus it's so nice to come home in the evening, open the door, and be greeted by the smell of freshly-cooked food. Yum!

Does anyone have any good crockpot recipes to share? I'm in [livejournal.com profile] what_a_crock, but I'd like to hear yours.

Beef stew.

Browned beef, potatoes, carrots, celery, onions, garlic, Italian seasoning, garlic salt, onion powder, bay leaf, parsley, water.

Dump in. Let cook until potatoes are mushy. Serve with milk.

damn.. that's my recipe almost! Except I use a can of tomato soup and a spash or two of red wine instead of water.

That's Mama's recipe.

Also, there's the classic mashed potato soup:

Ham or turkey ham/turkey loaf, cubed. Potatoes, cubed and in large chunks. Onions. Cook until dead. Add butter and sour cream just before serving.

2lb brick of velveeta, one small can of chopped green chilli's, and a can of hormel's beanless chilli

1 can sloppy joe mix
1 packet onion soup mix

let it cook all day

Beef Burgandy

1 small beef roast, browned on all sides
2 cans cream of mushroom soup
3/4 cup red burgandy wine
1 cup beef broth
1 packet onion soup mix
Some noodles/pasta (about 3 cups uncooked)

Toss soup, soup mix, wine, broth, noodles into crock pot & mix. Place beef roast in and cover with some sauce.

Cook on low until roast is done. Noodles may be added later in cooking process if you don't want them mushy.

Crock Pot Beef Tips
2 pounds extra lean beef tips
1 small can mushrooms, drained and rinsed
1 can Healthy Request cream of mushroom soup
1 cup red wine
2 tablespoons lite soy sauce
1 tablespoon dehydrated onion flakes (or 1/2 onion, finely chopped)
1 teaspoon dehydrated garlic flakes (or 1 clove minced garlic)

Optional: 1/2 cup sour cream, 1/8 tsp nutmeg

Combine all ingredients except nutmeg and sour cream. Cook on high 8-10 hours. Stir occasionally. Stir well before serving. After cooking, add sour cream and nutmeg if desired. Serve over rice.

Crock Pot Chicken

3-4 chicken breasts
1 can cream of chicken soup
1 can cream of mushroom soup
Garlic (optional)

Cook for 8 hours on low...serve over rice. Chicken will be falling apart.

Barbecued Beans

1 c ketchup
1 c brown sugar
1 T mustard
1 T vinegar
1/2 t salt

1/2 lb bacon, browned
1 lb hamburger, browned
1 onion, chopped & browned

2 cans (24 oz?) pork & beans / baked beans (can size is one larger than a 'standard' can)
2 cans (15 oz?) kidney beans, drained (can size is 'standard' - I use one dark & one light)
2 cans (15 oz?) other beans, drained (I like to use one can of garbanzo beans and one something else - I've seen Lima, Butter, and Great Northern beans used here.)

Put in crock pot, mix, cook on low all day. Refrigerated leftovers (if any) - they're even better reheated!

You're inspiring me! [livejournal.com profile] rance and I have a crockpot, but we've barely used it. I don't know why. With the weather as freezing as it's been, this is the perfect week here for some warm crockpot goodness.
